It isn't clear from the article whether the "structure" arises from optimal tesselation of aperiodic shapes like Penrose tiles en.wikipedia.org/wiki/Penrose_tiling or 2-dimensional grading of roughly equal numbers of 5 types of grain (think of concrete made from equal quantities of pebbles, shingle and sand). There are some theorems on pattern recognition that suggest a random sampling receptor can recognise shapes presented at random orientations rather better than a periodic receptor. Worth thinking about!
